Abstract
The research deals with the study of tables in the palaces of princes and caliphs in Andalusia, and the great attention that was given to the art of hospitality, cooking and preparing tables in that era, by focusing on the skills of cooks who were considered "princes of tables" and how to organize and serve food on important occasions. The research also sheds light on the methods that were used to decorate and coordinate tables in a way that reflects the level of sophistication and luxury in those palaces. The research also presents the tools and utensils used in the kitchens, which had unique designs and were influenced by local and oriental arts.The research includes five main sections: the first deals with the role of the cook in the palaces and how to organize his work, the second focuses on the ceremonies of honor at dining tables. The third section sheds light on the tools used in Andalusian kitchens, while the fourth section discusses raw materials and methods of preserving them to ensure the provision of the best foods. In the last section, the method of preparing and arranging tables to present food in a manner befitting the status of the caliphs, princes and their guests is discussed.9/10/2024Received :
